Special Macaroni and Cheese

It’s just ranch mac and cheese lol


Ingredients

  • cooked pasta

  • 8 oz sharp white cheddar, BLOCK. NOT PRE-SHREDDED

  • 6 oz mild gouda BLOCK. NOT PRE-SHREDDED

  • 4 tbsp butter

  • 1/4 tsp all-purpose flour

  • 2¼ cup whole milk

  • 1 tbsp ranch powder

  • salt

  • pepper

  • paprika

Directions

  1. Cook pasta shape and size to your liking and put to the side to hang out.

  2. Shred your cheese block either with a box grater (hard) or food processor (easy).

  3. On medium heat, melt your butter.

  4. Slowly add AP flour to your melted butter and stir constantly until aromatic.

  5. Turn your heat from medium to low. SLOWLY add your milk, a little at a time, until fully incorporated. Stir constantly until fully incorporated.

  6. Take your pot off of the heat and slowly add all of the cheese in. It might look chunky but it will emulsify fully with the noodles + residual pasta water.

  7. Slowly start to add strained pasta into the cheese sauce and stir.

  8. Add seasonings to taste.

  9. Enjoy!


Conclusion

I accidentally discovered the powdered ranch hack one Thanksgiving right before a Friendsgiving and haven’t looked back since. It’s so good! There’s a very tangy umami that the ranch powder adds, probably from the buttermilk. It’s so good. Highly recommend giving it a try with a small packet of ranch. And then the extra ranch you can use to make DIY ranch with greek yogurt! :)
