Coconut Peanut Butter Semifreddo

Semifreddo

It’s peanut butter ice cream, basically. It’s awesome!


Ingredients

This is based on this recipe by Fifteen Spatulas. I halved the recipe to make an appropriate amount (enough for 1 person).

YIELDS 4 PORTIONS

  • 4 egg yolks

  • 1/4 cup + 2 tbsp granulated sugar

  • 1/4 cup creamy peanut butter

    • You can try substituting different spreads! I used coconut peanut butter from Cocomo

  • 1/2 tsp vanilla extract

  • 1/2 cup heavy whipping cream


Conclusion

I am usually nauseated by peanut butter desserts after one portion. However, this was genuinely very delicious. I thoroughly enjoyed the texture more than the other egg yolk-based Matcha White Chocolate Ice Cream I’ve had in the past.

After freezing overnight, it hardens overall but not to a rock solid consistency.
