S’mores Cookies (Small Batch)

S’mores Cookies

It uses actual graham crackers crumbs! So next time you finish cheesecake, you can make these bad boys.


Ingredients

This is based on this recipe by theKitchn. However, I made a BUNCH of modifications and changed this to a small-batch recipe. Listen up!

YIELDS 4 COOKIES

Crispy and Dense

  • 1 cup graham cracker crumbs

  • 2 tbsp white sugar

  • 1 tbsp brown sugar

  • 1/2 egg (I made this video explaining how to halve eggs)

  • 2 tbsp butter, melted and cooled*

  • 1/4 tsp baking soda

  • splash of vanilla extract

  • 4-8 “chunk” pieces of chocolate. Opt for a high-quality chocolate

  • 12-count mini marshmallows

Soft and Chewy

  • 1 cup graham cracker crumbs

  • 2 tbsp white sugar

  • 1 tbsp brown sugar

  • 1 egg

  • 1/4 tsp baking soda

  • splash of vanilla extract

  • 4-8 “chunk” pieces of chocolate. Opt for a high-quality chocolate

  • 12-count mini marshmallows

Directions

  1. Preheat oven to 350F. Line your quarter sheet with parchment paper.

  2. Make graham cracker crumbs by either smashing crackers in a ziplock bag or pulverizing them in a food processor or blender.

  3. Mix graham cracker crumbs, sugar, and brown sugar.

  4. Mix egg, butter (if applicable), baking soda, and vanilla extract into the dry ingredients.

  5. Stir to combine until wet sand consistency.

  6. Portion into 1 oz balls using a medium cookie scoop. If you don't have a cookie scoop, use a regular spoon.

  7. Add garnishes on top of cookies. I like 3 marshmallows and 2 pieces of chocolate per cookie.

    1. Avoid putting chocolate too close to the cookie’s edge because it will ooze out of the cookie.

  8. Bake for 8-10 minutes. The cookies should come out looking very runny and underdone.

  9. Let cookies cool completely on the baking sheet. Once cool to touch, transfer the cookies to a cooling rack. Let cool completely.

  10. Enjoy!


My Mistakes

Not letting the melted butter cool

My cookies spread into the whole sheet pan LOL. The Mega Cookie.

Adding chocolate straight into the batter

It doesn’t look as good (the chocolate tends to melt straight into the batter) but a good option if you prefer homogenous foods.

Maybe it’s just me but man they look like nipples LOL.


Conclusion

I will be making this again any time I have extra graham crackers. I’ll probably whip some of this up since I know this by heart now.

And yes, I’m aware a cookie made of another cookie is silly!
