Lemon Scones

Scones are so good and easy. Plus you can substitute other citrus in it and it’ll be good either way!

This is the recipe I used from Mindful Avocado.

Scones

  • This is a vegan recipe but you can use regular butter and milk.

  • The consistency should be like a wet clay if the butter is mixed correctly

    • if it is too runny, chill in fridge for 30 minutes

Glaze

  • The glaze is very easy to eyeball. Its minimal liquid with a boat-load of powdered sugar and mixing until it is the correct consistency.

    • When in doubt, add more powdered sugar. It should be more gloopy than too liquidy. That way it will set better than running everywhere

    • If you add TOO MUCH powdered sugar and it becomes TOO gloopy, add a dash more citrus juice you are using. Be conservative.

Modifications

I used lemon since that’s what the recipe calls for, but you can use the following citrus to mix it up:

  • Lime

  • Orange (all variety)

  • Meyer lemon

  • Grapefruit

  • Pomelo

  • Any mix of the above

NOTE: if you’re using a sweet citrus, consider decreasing the total sugar.
