Lemon Scones (and other variations!)

This is the recipe I used from Mindful Avocado.
Scones
This is a vegan recipe but you can use regular butter and milk.
The consistency should be like a wet clay if the butter is mixed correctly
if it is too runny, chill in fridge for 30 minutes
Glaze
The glaze is very easy to eyeball. Its minimal liquid with a boat-load of powdered sugar and mixing until it is the correct consistency.
When in doubt, add more powdered sugar. It should be more gloopy than too liquidy. That way it will set better than running everywhere
If you add TOO MUCH powdered sugar and it becomes TOO gloopy, add a dash more citrus juice you are using. Be conservative.
Modifications
I used lemon since that’s what the recipe calls for, but you can use the following citrus to mix it up:
Lime
Orange (all variety)
Meyer lemon
Grapefruit
Pomelo
Any mix of the above
NOTE: if you’re using a sweet citrus, consider decreasing the total sugar.
