Stone Fruit Caprese

Caprese salad with white peach, aprium, plumcots, and absolutely no basil!


Ingredients

  • 1 white peach, crunchy

  • 1 plumcot

  • 1 aprium

  • optional: tomatoes, basil, other stone fruits like apricots, nectarines, etc.

  • 1 knob fresh mozzarella

  • balsamic glaze

  • mango vinegar - I got mine from Laconiko

Directions

  1. Deseed all fruits and slice thinly.

  2. Arrange by alternating different fruits.

  3. Drizzle balsamic glaze and/or vinegar of choice on top.

  4. Enjoy immediately!


Conclusion

I cannot tell you what came over me one day to want to crave this so badly but I was like ‘Man, I am going downstairs to pick up a ball of mozz and we’re making this TODAY.’ It was so good. Totally a great way to enjoy the in-season produce.
