Stone Fruit Caprese
Ingredients
1 white peach, crunchy
1 plumcot
1 aprium
optional: tomatoes, basil, other stone fruits like apricots, nectarines, etc.
1 knob fresh mozzarella
balsamic glaze
mango vinegar - I got mine from Laconiko
Directions
Deseed all fruits and slice thinly.
Arrange by alternating different fruits.
Drizzle balsamic glaze and/or vinegar of choice on top.
Enjoy immediately!
Conclusion
I cannot tell you what came over me one day to want to crave this so badly but I was like ‘Man, I am going downstairs to pick up a ball of mozz and we’re making this TODAY.’ It was so good. Totally a great way to enjoy the in-season produce.
