Carrot Pancake (Okonomiyaki)

Carrot Pancake

It’s like okonomiyaki except with carrot instead of cabbage


Ingredients

YEILDS 4 PANCAKES

  • 3-4 carrots

  • optional: 1/2 onion, diced or minced

  • 2 eggs

  • 4 tbsp AP flour

  • 1/2 tsp white pepper, ground

  • 1/2 tsp sugar

  • pinch salt

  • EVOO for pan frying

  • optional: soy sauce, mirin, shaoxing cooking wine, any seasonings you like

Directions

  1. Grate carrots on the smallest size possible with a box grater (preferred, harder) or food processor (easy).

  2. Add carrots, AP flour, eggs, and seasonings and stir until the correct consistency of paste-like texture.

  3. On medium heat, heat up non-stick pan.

  4. Add EVOO and fry each pancake for 1-2 min on each side or until fragrant.

  5. Serve immediately or refrigerate to reheat at a later time.

  6. Enjoy!


Conclusion

I discovered this one day when I was cooking for my friend Karis. I wanted to make Okonomiyaki, but I discovered she did NOT have cabbage. This was a happy surprise. Again, use the smallest grate size possible for the best mouthfeel. A thicker slice will result in a “crunchier” texture.
